Time to tell you some of my favorite recipes!

Pressed salad with walnuts and cranberries.

White hard cabbage slice into fine strips.

Cucumber slice into half moons,

Radish white or red grate medium fine.

Place all ingredient into a big bowl and massage lightly with one pinch Sea Salt per small hand full until it starts to sweat. Then place this salad mix between two plates with rock or wight on top of top plate.  Leave to press for 1-2 hours.

When done pour off any liquid that might have been squeezed out.

Then add if desired-

 Fresh coriander (cilantro) leaves.

Walnuts lightly toasted or soaked.

Cranberries dried (fruit sweetened).  Mmmmm
